The sign is up at the corner of Highway 12 and Warm Springs Road. The septic permit that held the project for four years was issued in June.

Burtech Wine & Pizza is taking the corner building at 9580 Highway 12. Signage went up this month, with the company’s shield crest over the entry arch. Burtech Family Vineyard is a San Diego County winery that bought a Sonoma vineyard and has poured at Sugarloaf Wine Co. near Oakmont.

When we reported on this corner earlier in the month, the tenant was unconfirmed. Burtech held a pending winegrower licence at the address and the permits named nobody. The sign settles it.

The septic is solved

The project has run on a use permit the county approved in May 2022. It authorises a 1,561 square foot pizza restaurant serving beer and wine, with patio seating and hours of 10am to 9pm, seven days a week. The permit superseded the site’s wine-tasting entitlement from 2011.

Waste water held it up for four years. A commercial kitchen on a half-acre parcel is hard to plumb. The first septic permit expired. Two more applications went in this May and were withdrawn within weeks.

The fourth attempt worked. Septic permit SEP26-0169 is now issued. A revision closed on August 13th, tripling the grease interceptor from 320 gallons to 1,000, with the tank staying where it was. The old well on the site was destroyed on July 24th, six inches of steel casing, 143 feet deep.

One permit is still open. The tenant-improvement permit covering heating, equipment, walls and signs, BLD26-1655, sits at “resubmittal received”, which means the county has the revised plans and is reviewing them. The taped doors in the photograph are painting, not construction.

No opening date has been announced. The fit-out permit has to be issued and the work signed off first.
